Italian Zucchini Bake

I know. I know. Enough Squash. Well, we still have more, and I am still trying to come up with more ways to eat it!
This recipe I got from The Pioneer Woman’s new site, TastyKitchen.com:
I obviously use yellow squash and zucchini interchangeably, I can not tell any difference, other than color, of course.





It is pretty simple, you basically just cook the squash and sausage, mix all of the other ingredients together and bake them in here:


This is a very easy and very delicious.
It reminded us of a breakfast casserole, so we ate the leftovers for breakfast!
